We just purchase a EvoPrimer STM32F107VC, as normal I seem to be go around in circles trying to understand where & how to start. I would like to get the 2 CAN channels running and ideally setup a 100ms Timer.

I have seen a few good examples of using the CAN controller, but could any one point me to an example for the EvoPrimer STM32F107VC?

With all these development boards, it would be nice to have a baseline software just to ensure I am going down the right road.

One other question, is there any CAN -> USB gateway projects just keen to setup a CAN trace tool with the STM32F107VC to help with my mini-project.

Take a look at the Primer2_Test project , that we updated today.
The Ride project "OP4Test _STM32C" in "stm32c.c" file contains CAN simple test for the STM32C EvoPrimer, that transfers data from one CAN port to the other one.
