using something different than GNU software

i have come accross a link to this new device today.

as i do not consider GNU software, is there other software that can be used to program the device? can i use assembly (i know PIC RISC assembly for instance)? can the device be used without libraries?

another idea i just had right now is to remove the ARM MCU, and replace it with a PIC (for instance). this would require a complete schematic, and also documentation for the LCD on hardware level. is this information available?

or, would it be possible to offer the device without a MCU, so users can choose a different CPU?

The aim of this Primer is to promote the STM32 MCU from ST, and to provide all tools for programming and debugging it, thanks to Raisonance products...
However, all schematics and datasheets are available on the resources page of this web site.
